How to Make Wild Rice with Coconut Oil

I love wild rice with coconut oil! I started making it at home recently in my rice cooker and the flavor is so delicious. The rice has a little bit of crunch to it and it creates such a delicious and hearty side dish. I like to serve wild rice with chicken or tofu but it would go great with just about anything. This type of rice takes a longer amount of time to cook and it soaks up more water than white rice. The first time I made it I was expecting it to cook as quickly as white rice and I had to wait almost 4 times as long for it to cook, so be warned! If you’re not in a hurry and want a hearty, healthy, and wholesome side dish I highly recommend this. You can make big batches and store them in your fridge as meal prep, also. You might ask… why coconut oil? It has a similar flavor to buttered rice but is a healthier option. I also put salt and a dash of cayenne on my wild rice. This rice goes wonderful with vegetables and especially broccoli! I hope you enjoy!

Wild Rice with Coconut Oil Ingredients

1 cup wild rice
2 cups water
1 tbsp coconut oil
1/2 tsp salt
1/16 tsp cayenne pepper

Instructions

  1. add the wild rice and water to the rice cooker and cook until done
  2. taste the rice, if it’s still too crunchy and undercooked add more water and continue to cook, taste again.. when it’s soft but a little crunchy it’s done!
  3. pour the wild rice into a serving bowl and mix in the coconut oil, salt, and cayenne pepper, serve!

Tips: I believe the best way to prepare this rice is to taste it occasionally to see if it’s ready to eat. This is not like cooking white rice and you can actually drain off the extra water at the end if needed. I highly recommend tasting it midway to see if it’s ready. You don’t want the rice to be too mushy and it should have some light crunch to it!
