Tomato & Goat Cheese Flatbread Pizza Dough Ingredients (makes 8 pieces of flatbread pizza)

2 1/8 cups flour
1 tsp salt
1.5 tsp sugar
1 0.25 package of active dry yeast
1/4 cup water
3/4 cup coconut milk (almond milk is also fine)
1 1/2 tbsp extra virgin olive oil

Tomato & Goat Cheese Flatbread Pizza Toppings

2 1.70 oz packages of goat cheese
40-50 arugula leaves
4 Roma tomatoes, sliced into rounds
fresh ground pepper
optional: drizzle a little extra virgin olive oil on top

Instructions

  1. combine dry pizza dough ingredients in a mixing bowl and stir with a fork or whisk
  2. add water, coconut milk, and olive oil, stir, and knead for 2 minutes (add extra flour if the dough is too sticky)
  3. cover with a damp cloth kitchen towel and set aside
  4. preheat oven to 250° for about 2 minutes and then turn the oven’s heat completely off
  5. place the bowl inside the warm oven (make sure the oven is not turned on!) and let it sit for 20-45 minutes until the dough has doubled in size
  6. cut dough into 8 even pieces, knead and roll out into 8 round discs
  7. preheat oven to 450°
  8. place rolled dough onto silicone-lined baking sheets, sprinkle on 1/8 of the goat cheese and then 1/8 of the tomato slices onto each (you can probably fit 2-4 pieces in the oven at a time)
  9. bake for 15 mins
  10. add 6 arugula leaves to each pizza, sprinkle with fresh ground pepper, and serve!
