How to Make Vegan Tomato, Onion & Garlic Flatbread Pizza

I am so excited to bring you this recipe for vegan tomato onion and garlic flatbread pizza! I was in heaven eating this pizza a few weeks ago and it’s high on my list of things to cook again as soon as possible. The onions on it are actually Tokyo bbq green onions with the stems cut off and I used whole pieces of roasted garlic. The tomato is sliced and baked and there is a layer of vegan cheddar cheese underneath all of the toppings. Wowza, yummy! Please let me know what you think!
Vegan Tomato, Onion & Garlic Flatbread Pizza Dough Ingredients (makes 8 pieces of flatbread pizza)
2 1/8 cups flour
1 tsp salt
1.5 tsp sugar
1 0.25 package of active dry yeast
1/4 cup water
3/4 cup coconut milk (almond milk is also fine)
1 1/2 tbsp extra virgin olive oil
Vegan Tomato, Onion & Garlic Flatbread Pizza Toppings
1 cup shredded vegan cheddar cheese
3/4 cup pizza sauce
4 Roma tomatoes, sliced into rounds
8 Tokyo green onions (you could substitute 4 shallots)
40 pieces of roasted garlic
fresh ground pepper
2 tsp Italian seasoning
optional: drizzle a little extra virgin olive oil on top, garnish with fresh chopped cilantro
Instructions
- combine dry pizza dough ingredients in a mixing bowl and stir with a fork or whisk
- add water, coconut milk, and olive oil, stir, and knead for 2 minutes (add extra flour if the dough is too sticky)
- cover with a damp cloth kitchen towel and set aside
- preheat oven to 250° for about 2 minutes and then turn the oven’s heat completely off
- place the bowl inside the warm oven (make sure the oven is not turned on!) and let it sit for 20-45 minutes until the dough has doubled in size
- cut dough into 8 even pieces, knead, and roll out into 8 round discs
- preheat oven to 450°
- place rolled dough onto silicone-lined baking sheets, sprinkle on 1/8 of the vegan cheddar and then 1/8 of the tomato slices onto each (you can probably fit 2-4 pieces in the oven at a time)
- cut the white part of the onion into chunks and place them between the tomato slices
- place the roasted garlic in any remaining spaces on the pizza until it is all used up
- sprinkle the Italian seasoning onto each flatbread pizza
- bake for 15 mins
- garnish with fresh chopped cilantro, sprinkle with fresh ground pepper, and serve!
