How to Make Vegan Garlic Mashed Potatoes

This recipe for vegan garlic mashed potatoes is so delicious. I was making mashed potatoes for Easter dinner this year and wanted to try creating them dairy-free. This recipe is the perfect balance of coconut milk and seasonings to give it the classic mashed potatoes flavor with very healthy ingredients.
My grandmother used to make mashed potatoes for every holiday. It was my favorite food growing up and she even would bring me mashed potatoes in bed sometimes! She would go out to her garden to cut fresh chives. She was so amazing, I miss her! Anyhow- I hope you love this recipe for dairy-free vegan mashed potatoes.
Vegan Garlic Mashed Potatoes Ingredients
4 russet potatoes peeled
1/4 cup coconut milk
1tsp minced garlic
1/2 tsp salt
1/2 tsp garlic powder
garnish with 1 tsp coconut oil
Instructions
- boil water in a stock pot
- peel potatoes and cut into thirds, add to stock pot and cook until tender
- strain water off potatoes and pour potatoes into a mixing bowl
- using a hand mixer break up any lumps
- microwave the coconut milk until warm (keep it covered so it doesn’t splash) and then stir remaining ingredients into the coconut milk
- pour the coconut milk on top of the potatoes and mix thoroughly
- pour potatoes back into the empty stock pot and heat them up again, stir until garlic is fully cooked
- serve mashed potatoes garished with coconut oil or vegan butter. They go great with fresh chives on top!
