How to Make Tomato & Goat Cheese Flatbread Pizza

You’re going to love this recipe for tomato & goat cheese flatbread pizza! It’s got the tangy flavor of goat cheese mixed with a classic hint of Margherita pizza. This recipe is so easy to make and the dough will keep for several days in your fridge. You can make all 8 pieces of tomato and goat cheese or spice it up by creating a unique flavor for each piece! Tomato & Goat Cheese Flatbread Pizza Dough Ingredients (makes 8 pieces of flatbread pizza)
2 1/8 cups flour
1 tsp salt
1.5 tsp sugar
1 0.25 package of active dry yeast
1/4 cup water
3/4 cup coconut milk (almond milk is also fine)
1 1/2 tbsp extra virgin olive oil
Tomato & Goat Cheese Flatbread Pizza Toppings
2 1.70 oz packages of goat cheese
40-50 arugula leaves
4 Roma tomatoes, sliced into rounds
fresh ground pepper
optional: drizzle a little extra virgin olive oil on top
Instructions
- combine dry pizza dough ingredients in a mixing bowl and stir with a fork or whisk
- add water, coconut milk, and olive oil, stir, and knead for 2 minutes (add extra flour if the dough is too sticky)
- cover with a damp cloth kitchen towel and set aside
- preheat oven to 250° for about 2 minutes and then turn the oven’s heat completely off
- place the bowl inside the warm oven (make sure the oven is not turned on!) and let it sit for 20-45 minutes until the dough has doubled in size
- cut dough into 8 even pieces, knead and roll out into 8 round discs
- preheat oven to 450°
- place rolled dough onto silicone-lined baking sheets, sprinkle on 1/8 of the goat cheese and then 1/8 of the tomato slices onto each (you can probably fit 2-4 pieces in the oven at a time)
- bake for 15 mins
- add 6 arugula leaves to each pizza, sprinkle with fresh ground pepper, and serve!
