How to Make a Strawberry & Goat Cheese Salad

You will love this recipe for a strawberry and goat cheese salad. It’s August today as I’m writing this and strawberries are in season. I’ve been cooking lots of meals on the Mediterranean diet lately and wanted to invent something tasty with strawberries. This was a hit! This salad has honey goat cheese but I’m sure plain would taste just as yummy. I decided on a simple balsamic vinegarette but you could also use a creamier dressing if you prefer. I really hope you love this fresh summer salad. It’s perfect for breakfast, brunch, lunch, or dinner!

Strawberry & Goat Cheese Salad Ingredients

1.5 cups chopped Kale
1.5 cups chopped romaine
6 strawberries
2 oz goat cheese (honey or plain)
1 tbsp salted sunflower seeds
20 almonds (I like to use roasted and salted almonds)
5 tbsp balsamic vinegarette dressing
salt, and pepper to season at the end
sprig of cilantro (optional)

Instructions

  1. toss the kale and romaine together in a bowl and set aside
  2. remove the strawberry tops and cut them into 4’ths
  3. add the salad dressing to the kale and romaine, toss and put onto a serving plate
  4. sprinkle strawberries on top
  5. crumble goat cheese and sprinkle on top of strawberries
  6. evenly distribute almonds on top of the salad
  7. sprinkle the sunflower seeds towards the center
  8. Add salt and pepper and garnish with fresh cilantro

Tips: don’t add the dressing until just before serving this salad
