How to Make a Spinach and Feta Breakfast Burrito

Have you ever tried a spinach and feta breakfast burrito? So incredible! This recipe is quite healthy and also vegetarian! This recipe is also incredibly easy to make. I made 5 of these burritos while my fiance was taking a shower and popped them into the freezer! It can’t get any easier than that!

Spinach and Feta Breakfast Burrito Ingredients

5 spinach burrito wraps (you can find them in the tortilla section of the grocery store)
5 tbsp enchilada sauce
6 eggs
1/4 tsp salt
4 oz feta cheese
1 7oz can green salsa
5 cups of fresh spinach

Instructions

  1. crack all six eggs and place in a crepe pan or skillet, stir until yokes are broken, and pour in salsa
  2. turn the heat on and stir constantly with a spatula until the eggs are scrambled and cooked
  3. pour egg and salsa mixed into a medium-sized bowl
  4. add salt and feta cheese, stir
  5. pour spinach into the bowl and stir until the spinach wilts
  6. brush each tortilla wrap with enchilada sauce
  7. pour the egg and spinach mixture equally into each tortilla and roll them up
  8. wrap in foil & freeze
  9. to heat up place frozen burritos in the oven, set the oven to 350°, and bake for 1 hour (no pre-heat)
  10. remove from foil, cut in half & serve!

Tips: you could also eat these fresh if you wanted, simply bake for 20-30 minutes at 350°
