How to Make Ultimate Smashed Potatoes

Are you wondering what ultimate smashed potatoes are and what that even means? Let me tell you.. that for my 100’th recipe I wanted to unveil something truly delicious and unique! This recipe is gonna knock your socks off. I use baby potatoes and roast them in the oven with olive oil until they are tender and then I smash them using a highball glass, season, toss and bake again. I broil them at the end and let me just say that these breakfast potatoes taste incredible! They are vegan, vegetarian, and on the Mediterranean diet. They are my new favorite comfort food and one of the easiest recipes I’ve ever created. I hope you love, love, love them! Please let me know in the comments what you think!
Ultimate Smashed Potatoes Ingredients (serves 4)
40-45 baby potatoes
4 tbsp olive oil
1/4 tsp salt (extra to sprinkle on top)
1/2 tsp chili powder
1/2 tsp thyme
1/2 tsp garlic powder
1/8 tsp cayenne pepper
5-10 green onion stems
Instructions
- Preheat the oven to 425°F
- Spread the baby potatoes out evenly in a glass baking dish, there should be one layer with no space between them
- drizzle 2 tbsp of extra virgin olive oil onto the potatoes, toss & bake for 40 minutes
- remove potatoes from the oven and test them with a fork, they should be soft inside
- using a highball glass or cocktail shaker smash the potatoes down once each
- add all seasonings, green onion, and remaining extra virgin olive oil, toss and bake for 30 more minutes
- remove potatoes, toss, sprinkle additional salt as desired, and broil on high for 3 minutes
- remove potatoes, toss, and broil on high for 4 more minutes
- toss, place in a serving bowl, and enjoy
Tips: You can use any type of baby potatoes you like however my favorite are red and yellow creamer potatoes
