How to Make Roasted Herbes de Provence Chicken Breast

This recipe for roasted herbes de Provence chicken is something unique and special! I love herbes de Provence and was in the mood to cook with them so I created a savory marinade for roasted chicken breast. The chicken was so tender and delicious and I’ve made this twice in one week since my fiance loved it. Please let me know what you think! Sending love to you all.

Roasted Herbes de Provence Chicken Breast Ingredients (serves 4-6)

3 boneless skinless chicken breasts
1/4 tsp ground nutmeg
2 tbsp extra virgin olive oil
1 tbsp minced garlic
1 tsp herbes de Provence
1/4 tsp salt
1/4 tsp onion powder
1/4 tsp fresh ground pepper (about 16 turns of the pepper grinder)
1/4 tsp oregano
1/8 tsp ground cinnamon
1 tsp brown sugar
1 tbsp fresh chopped parsley

for when you bake:
1 lemon
3-5 whole pieces of peeled garlic

Instructions

  1. mix all seasoning ingredients together in a small bowl & brush onto the tops of the chicken breasts, rub seasonings into the breasts on both sides
  2. place in the fridge to marinate for 24 hours
  3. preheat oven to 425°, and let chicken rest on the counter as the oven preheats to bring it closer to room temperature
  4. place chicken breasts in a glass pie dish cut a lemon in half, and place in the pie dish, add the garlic cloves and place around the chicken
  5. bake the chicken uncovered until it reaches an internal temperature of 167° (I use a meat thermometer), this takes roughly 25-35 minutes
  6. remove from oven and let the chicken rest for at least 5-6 minutes, slice
  7. serve with your favorite sides dishes such as oven-roasted potatoes and steamed green beans
