How to Make Quinoa Cucumber Salad

This recipe for quinoa cucumber salad is incredible! It’s so fresh and crisp & healthy but also packs a lot of flavor! I was craving quinoa and wanted to make a salad so I decided to make it using fresh cucumber and kalamata olives. Wow! What an incredible combo! I hope you enjoy it. This would be a great dish to bring to a potluck or to serve as a side with any meal.
Ingredients
1 cup quinoa
1 1/3 cup water
1 tbsp lemon juice
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
3/4 tsp salt
1 tsp garlic powder
1 tbsp kalamata olive juice (from the jar the olives come in)
10 kalamata olives chopped
1/8 tsp cayenne pepper
1/2 tsp sugar
1/16 tsp ground pepper
1 cucumber
2 tbsp fresh chopped cilantro
1 tbsp chopped piquillo peppers
Instructions
- rinse quinoa with cold water and then drain with a siev
- pour quinoa and water into rice cooker and cook, pour into large bowl and let it cool for 15 mins
- add all ingredients except for the cucumbers and cilantro & stir
- cut the cucumber into small pieces and add to the bowl, add the cilantro, stir
- pour into a serving bowl
Tips: I like to reserve a few pieces of cucumber, piquillo peppers, kalamata olive & a small amount of cilantro to garnish the top of the bowl with, you can chill this for a few hours if you prefer to serve it cold. I like to serve it at room temperature.
