How to Make Pumpkin Spice Bread

Do you love pumpkin spice? This easy recipe for pumpkin spice bread will dazzle you! It only takes a few minutes to prep and as you bake it your entire home will fill with the delicious smell of pumpkin spice! There isn’t any actual pumpkin in this recipe but it has all of the yummy spices that go into a pumpkin pie!

I recently created this pumpkin spice bread recipe & it was a huge hit so I’ve decided to bake a few more for the holidays. The wildflower loaf pan that I use is really quite beautiful & I’m excited for folks to see the flowers on top!

Ingredients (serves 8-10)

1 3/4 cup flour
2 tsp baking powder
1/2 tsp salt
1 1/8 cup granulated sugar
2/3 cup light coconut milk
2 eggs
4 tbsp brewed coffee (I use espresso roast coffee )
3/4 cup unsalted butter (softened)
1 ripe pear peeled, cored & cut into small chunks
1/2 tsp ground ginger
1/4 tsp allspice
1/2 tsp cinnamon
1/4 tsp white pepper
1/2 tsp nutmeg

Instructions

  1. preheat oven to 325°
  2. In a large metal or glass bowl beat together butter and sugar until creamy
  3. add eggs and beat until combined
  4. pour in spices and seasoning, mix
  5. next add the flour, baking powder in slowly a little at a time and mix as you pour
  6. add in the light coconut milk & espresso roast coffee, mix & scrape sides with silicone spatula, mix again
  7. add pears last and stir with a wooden or bamboo spoon
  8. pour into loaf pan
  9. bake for 1 hour and 15minutes

Tips: It’s important to let the loaf pan cool for at least 15 minutes before flipping it over. Once cool you can flip it over onto a plate & serve it. This pumpkin spice bread goes great with butter or vegan butter spread on each slice. Sprinkle with cinnamon for a beautiful garnish!
