How to Make Piquillo Pepper Hummus

I recently made this piquillo pepper hummus for a potluck, and it was a huge hit! I wanted something mild because kids were going to be there and I thought these tasty but mild peppers would be perfect! What a pretty color these peppers are! I love to use them in breakfast dishes but they are perfect for hummus! I recommend making this recipe a day before the event so that the garlic can really absorb into the dip and enhance the flavor. Piquillo Pepper Hummus Ingredients
1 can of chickpeas
1/4 cup tahini
2 tbsp fresh lime juice
1 tbsp fresh lemon juice
2 tsp minced garlic
3/4 tsp salt
2 pinches paprika
1/4 tsp cayenne pepper
1 tbsp sugar
1/2 tbsp finely diced piquillo peppers
1 tbsp extra virgin olive oil
Instructions
- mix all ingredients except the piquillo peppers and olive oil together in a food processor until smooth, add 1-2 tsp of water as needed if you want it less chunky
- place hummus in a small bowl and put the piquillo peppers on top in the center
- pour the olive oil on top & sprinkle with paprika
- serve with homemade pita bread, cucumber slices, or carrot sticks
- if you refrigerate for 24 hours before serving the flavors will be more delicious!
