How to Make a Peach and Basil Salad

This peach and basil salad makes the perfect side dish for a summer breakfast. The salad is not sweet but rather tangy with a subtle spice. It’s as if fresh fruit got a little bit of tangy dressing on it to delight your senses! This salad would be great served over spinach, on the side of an omelet or piece of quiche.. or served with cottage cheese. The color is gorgeous! You could also use nectarines if you don’t have peaches. If you wanted to add some fresh berries to this salad they would go nicely. So many options! Enjoy!

Peach and Basil Salad Ingredients

2 peaches
4-6 basil leaves sliced in long pieces
1/4 tsp lemon juice
1/8 tsp sugar
1/4 tsp coconut oil
pinch of cayenne pepper

Instructions

  1. cut peaches into 3/4 inch chunks and put them into a mixing bowl
  2. toss in lemon juice
  3. microwave the coconut oil and sugar and pour it over the peaches and stir
  4. pour salad into a serving bowl, sprinkle with cayenne pepper (optional)
  5. slice the basil leaves into long pieces and sprinkle them on top of the salad
