How to Make Oven-Baked Chicken Thighs with Herbs

You’re gonna love this recipe for oven-baked chicken thighs with herbs! Holy moly this is easy and delicious! I love to make bone-in chicken thighs in the slow-cooker but I was curious how they would taste baked in herbs. Yum!!! I served this with some rice that I seasoned with tomato and chicken broth, and I used fire-roasted corn for the side! So good!
Oven-baked Chicken Thighs with Herbs Ingredients (serves 2)
2 bone-in chicken thighs
2 tsp minced garlic
1 tbsp fresh basil (chopped)
1 tsp Italian seasoning
1 1/2 tbsp extra virgin olive oil
1/4 tsp salt
1 1/4 tsp ground pepper
1 1/4 tsp paprika
Instructions
- preheat oven to 400°
- place chicken thighs on a baking sheet that is lined with a silicone mat or foil
- mix all seasoning sauce ingredients together in a small bowl & brush onto the tops of the chicken thighs
- bake the chicken uncovered for 45 mins
- turn the oven temperature down to 170° and continue to cook for 30 mins
- remove piles of spices on top of chicken thighs with a spoon before serving
- serve with your favorite rice and veggie such as fire-roasted corn
Tips: you can brush olive oil or butter onto the oven-baked chicken 15 minutes after you’ve turned the oven down to 170° (optional) this can make it crispier and tastier
