How to Make a Kale Caesar Salad with Cranberries

This recipe for a kale caesar salad with cranberries is amazing! I was looking for something to serve as a side dish with breakfast & I knew I wanted to use the kale soon… the dried cranberries seemed like something that might be yummy with kale. I was right! Wow! I used an asiago caesar dressing I had & oh my goodness, yum!
I’ve been looking for ways to add more salads and green veggies to my meals! Growing up as a kid in Ohio I don’t remember kale being something that I saw very often but it’s very popular in the pacific northwest. I have grown to love it as an adult and I’ve noticed that many local restaurants here offer a kale salad. It’s so exciting to make this at home for my family!
Ingredients
1-2 bunches of kale
1/8 cup dried cranberries
1-2 tbsp vegan parmesan (you could use freshly grated parmesan)
2-3 tbsp asiago caesar dressing
Instructions
- mix the kale and dressing together in a bowl using tongs, use only enough dressing to barely coat the kale
- pour salad onto plate or serving dish
- sprinkle generously with vegan parmesan
- sprinkle dried cranberries on top
Tips: be careful not to overdress this kale caesar salad with cranberries! It will have plenty of flavor with a light dressing. You can always add more but you can’t take it away! I like to put a few turns of fresh ground pepper on top at the end!
