How to Make Perfect Hollandaise Sauce

Want to know the secret to perfect hollandaise sauce? I’ve finally found it after years of trial and error and I’m so excited to share it with you! Hollandaise sauce is notoriously challenging to make. I have been working hard at this for so long and it’s so much less intimidating now that I have a super easy go-to recipe!

Perfect Hollandaise Sauce Ingredients (serves 2)

1 tsp lemon juice
1/4 tsp dijon mustard
1/8 tsp salt
pinch of cayenne pepper
2 egg yokes
4 tbsp butter

Instructions

  1. pour the lemon juice, dijon mustard, salt, cayenne pepper, and egg yokes into a food processor and pulse until combined
  2. take the 4 tbsp of butter and microwave it for 15-30 seconds until hot and melted (be sure to cover the butter while cooking or it will splash all over your microwave)
  3. while the food processor is running on chop or pulse, slowly pour the butter in until it’s all combined
  4. pour the sauce into a glass pitcher
  5. using a large pot boil a few cups of water, turn the heat down to medium, and then place the glass pitcher into the pot
  6. stir the sauce vigorously as it cooks until it reaches the perfect thickness (this should only take about 15-30 seconds to achieve)
  7. the sauce is now ready to serve

Tips: you can warm the hollandaise up again for a few seconds by putting the pitcher back in the pot of hot water if needed. Sometimes I do this after everything on the plate has been arranged and I want the sauce to be hot again
