How to Make Green Curry with Tofu

Do you love green curry with tofu? Me too! I love green curry with anything.. chicken.. shrimp… yum! I always order this dish when I go to a Thai restaurant and so it seemed like a really wonderful thing to learn how to make at home, too. First, you have to make the green curry paste for the sauce once you add the coconut milk to the paste…. magic! You will love this healthy vegan recipe!
Green Curry Tofu Ingredients
1 package of extra firm tofu
1.5 cups green curry paste
1 yellow onion
1 cup coconut milk
1 crown of broccoli
1 8oz can of bamboo shoots
1/4 crown of cauliflower
1 cup of rice
Instructions
- Press the tofu between two kitchen towels for 15 minutes by placing something heavy on it
- cut the tofu into cubes and place in a bowl
- sautee the onions in some water on medium heat until softened, add more water as needed and drain off extra water once cooked
- steam the rice in a rice cooker
- take tofu & cook in a skillet on medium-high heat until the cubes are golden brown. Add a small amount of water to the skillet as you cook, set aside when cooked
- steam broccoli and cauliflower and set aside
- pour onions, coconut milk, curry paste, and bamboo shoots into a large pot and bring to a boil
- add veggies and tofu to the pot and gently stir, pour over rice & serve
- garnish with fresh chopped cilantro and green onion
