How to Make Coconut Ginger Cilantro Rice

This delicious recipe for coconut ginger cilantro rice will make you wish the summer lasted forever. So light & refreshing with a hint of sweetness! You could serve this as a side with so many dishes, the sky’s is the limit! It’s a favorite dish in my home and I swear my fiance could eat it every day and wouldn’t complain. The flavors are very subtle and mild but it’s got so much more personality than just a plain bowl of rice. I’m excited to try this side dish with many things in the future and can let you know which are my favorite pairings. So far I’ve tried it with teriyaki chicken and chicken enchiladas.. and wowza! Perfection! Enjoy!

Ingredients (serves 2)

1 cup jasmine rice (you can use a different kind of rice if you don’t have jasmine)
1 1/4 cups water
1/2 tsp sugar
1/2 tsp salt
1/2 tsp ginger
1/8 cup coconut milk
1 tbsp chopped cilantro

Instructions

  1. Pour jasmine rice, water, salt, sugar, & ginger into the rice cooker, stir and cook
  2. Pour the rice into a bowl, add coconut milk and chopped cilantro, stir
  3. serve!

Tips: This coconut ginger cilantro rice is so tasty and goes wonderful with teriyaki chicken but would also go wonderful with tacos or enchiladas. If you are vegan this would go amazing with tofu. This would also go amazing with a Thai or Indian recipe.
