How to Make Chicken & Vegetable Stir Fry

Do you make your own chicken and vegetable stir fry at home? It’s so easy. This dish is especially good if you have a leftover chicken breast that you don’t know what to do with. The Asian aisle at the grocery store should have cans of stir-fry vegetables that you can stock up on and then toss with chicken for this easy dish. When I first met my husband I asked what his favorite foods were and I remember him saying that he loved baby corn and stir fry vegetables. I sometimes would purchase baby corn and try to make stir fry for him but I recently discovered that you can buy all the stir fry veggies in a can and it makes it so easy! I had some asparagus to use up so I tossed that in but you could certainly use broccoli or any other veggie you have on hand. You’re going to love this easy meal!
Chicken & Vegetable Stir Fry Ingredients (serves 2)
1 pre-cooked chicken breast cut in half longways and sliced
1 cup rice
1 can stir fry vegetables (I like Sun Luck brand)
1 tbsp sesame oil
2 tbsp teriyaki sauce
pinch cayenne pepper
1 egg white
4 pieces of asparagus cut into 2-inch pieces
Instructions
- steam rice in a rice cooker
- add sesame oil, chicken, vegetables, egg & to a frying pan and stir rapidly on high heat
- pour teriyaki sauce into the skillet and stir, add a pinch of cayenne, stir
- remove from heat and pour on top of prepared rice
Tips: I like to taste as I go and it tastes like it needs more teriyaki you can always add a splash more. If the pan gets very dry you can add a splash of water to help things cook
