How to Make Chicken & Goat Cheese Flatbread Pizza

Do you have leftover chicken breast? You will love making this chicken and goat cheese flatbread pizza! I love to make this when I have a few leftover chicken breasts in the fridge. This pizza dough is super easy to make and will last in your fridge for several days. You can whip up any kind of flatbread you like.. the flavor combinations are endless!

Chicken & Goat Cheese Flatbread Pizza Dough Ingredients (makes 8 pieces of flatbread pizza)

2 1/8 cups flour
1 tsp salt
1.5 tsp sugar
1 0.25 package of active dry yeast
1/4 cup water
3/4 cup coconut milk (almond milk is also fine)
1 1/2 tbsp extra virgin olive oil

Chicken & Goat Cheese Flatbread Pizza Toppings

2 pieces of roasted chicken breast (can be leftover chicken)
2 1.70 oz packages of goat cheese
24 black olives
fresh chopped parsley for garnish
fresh ground pepper
optional: drizzle a little extra virgin olive oil on top

Instructions

  1. combine dry pizza dough ingredients in a mixing bowl and stir with a fork or whisk
  2. add water, coconut milk, and olive oil, stir, and knead for 2 minutes (add extra flour if the dough is too sticky)
  3. cover with a damp cloth kitchen towel and set aside
  4. preheat oven to 250° for about 2 minutes and then turn the oven’s heat completely off
  5. place the bowl inside the warm oven (make sure the oven is not turned on!) and let it sit for 20-45 minutes until the dough has doubled in size
  6. cut dough into 8 even pieces, knead and roll out into 8 round discs
  7. preheat oven to 450°
  8. cut the chicken into 1-inch chunks, and cut the black olives in half
  9. place rolled dough onto silicone-lined baking sheets, sprinkle on 1/8 of the goat cheese and then 1/8 of the chicken and 1/8 of the olives onto each (you can probably fit 2-4 pieces in the oven at a time)
  10. bake for 15 mins
  11. sprinkle fresh chopped parsley onto each pizza, sprinkle with fresh ground pepper, and serve!
