How to Make a Cajun Swiss Bagel Breakfast Sandwich

This recipe for a cajun Swiss bagel breakfast sandwich is delicious and has a little kick! My husband loves bagels so much that if I forget to get them for him at the grocery store he will get them himself! To satisfy his bagel cravings I make lots of different types of bagel sandwiches. They are easy to make and I like to get creative with the toppings and seasonings. Mardi Gras was a few weeks back and I was cooking Étouffée and needed to make a big batch of cajun seasoning. Sometimes I like to mix the seasoning into the cream cheese but for this recipe, I sprinkled it on the melted Swiss. I hope you enjoy it! Please let me know what you think! Cajun Swiss Bagel Breakfast Sandwich Ingredients

1 bagel
1 slice of Swiss cheese
1 egg
1.5 tbsp butter
1 tbsp mayonnaise
1/4 tsp sriracha sauce
2 tbsp cream cheese
1/8 tsp cajun seasoning
salt
fresh ground pepper
1 green onion chopped into little round pieces
optional: sprinkle with Pico Fruta

Instructions

  1. toast the bagel
  2. melt the butter and fry the egg over easy, place the cheese on top and cover the frying pan with its lid until the cheese is melted
  3. set the egg aside and rub the flat ends of the toasted bagel into the skillet to soak up the remaining butter
  4. spread cream cheese onto the bottom half of the bagel, and sprinkle half of the green onion onto the cream cheese
  5. place the egg with cheese on top of the cream cheese, sprinkle some salt, pepper, and all of the cajun seasoning on top
  6. spread mayonnaise onto the top half of the bagel, dot it with sriracha sauce a few times
  7. put the top on and cut the bagel in half, sprinkle the remaining green onion pieces on top, and sprinkle with Pico Fruta
