How to Make Cajun Macaroni Salad

This recipe for cajun macaroni salad is so simple and delicious! I made shrimp étouffée for Mardi Gras this year and I had some extra cajun seasoning to use up so I created this cajun macaroni salad! It’s served warm but could also be served cold if you prefer. This dish is very light and not heavy at all. This would make an excellent side dish for lunch or dinner but I also highly recommend it as an entree! It was so delicious that I could eat it several times a week and still want more! You could fancy it up with some sliced avocado on top! It would go great with anything!

Cajun Macaroni Salad Ingredients (serves 2)

2 cups elbow macaroni
1/2 tbsp extra virgin olive oil
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp paprika
1/8 tablespoon ground pepper
1/8 tablespoon ground white pepper
1/4 tsp onion powder
1/8 tsp dried oregano
1/8 tsp cayenne pepper
1/8 tsp thyme
1 1/2 tbsp fresh chopped parsley
1/2 tbsp coconut oil
1-2 tbsp vegan parmesan

Instructions

  1. cook the macaroni in a pot until tender and strain
  2. add all remaining ingredients except for the parmesan to the pasta and stir
  3. pour into two bowls and garnish with vegan parmesan cheese

Tips: You could use mayonnaise in the salad if you’re looking for a cold salad.
