Breakfast Quesadilla Ingredients (serves 2)
2 eggs
1/4 cup shredded cheese (cheddar, mozzarella, anything you like!)
2 whole wheat tortillas
1/8 tsp salt
1/8 tsp ground pepper
1/4 tsp extra virgin olive oil
Instructions
- scramble up the eggs, cheese salt, and pepper in a bowl
- pour olive oil into a crepe pan and make sure it coats the bottom of the pan
- put the first tortilla down & turn the heat on medium-low
- pour the scrambled egg mixture on top of the tortilla leaving a little bit of the edges dry
- place the second tortilla on top, cover it with the lid
- cook for one minute on medium-low, flip, remove from heat, cover
- cut the tortilla into 4-6 pieces
- serve with fresh fruit or salad
