How to Make Baked Eggs with Potatoes and Bacon

Have you ever wondered how to make baked eggs with potatoes and bacon? I was quite curious myself and decided to experiment at home. I took my breakfast potatoes recipe and added bacon and baked eggs to it! I decided to swap the onions out with green onions for some added color & I was super happy with the result. I also added pickled beets as a garnish!

Ingredients (serves 2)

2 large russet potatoes
1 tbsp olive oil (any cooking oil will due)
1/2 tsp salt
1/2 tsp chili powder
1/2 tsp Italian seasoning
5 strips of bacon (I used applewood smoked because it’s my favorite)
4 eggs
1 tbsp finely grated cheddar cheese
1/2 tbsp chopped green onion
garnish plates with pickled beets & fresh parsley

Instructions

  1. Preheat the oven to 425°F
  2. Cut the potatoes into 1/2 inch cubes and pour into a large bowl
  3. Add olive oil and seasoning to the bowl and toss everything until combined (you can use a spoon or even just use your hands to toss)
  4. Place potatoes on a baking sheet in one thin layer
  5. cut bacon into 1/2 in pieces and place in a separate roasting pan or baking sheet
  6. cook potatoes and bacon on center oven rack for 15 minutes, remove bacon from oven and set aside. Continue to cook potatoes for 5 more minutes
  7. broil potatoes on high for 4 minutes, use slotted spatula to add them to glass pie dish, add in the bacon and toss
  8. using a spoon make 4 evenly spaced holes in the pie dish for the eggs to go
  9. sprinkle grated cheddar over the entire dish, sprinkle green onion over entire dish
  10. carefully crack and pour eggs into 4 holes
  11. bake for 15 minutes
  12. remove from oven & let cool for 10 minutes, serve immediately!

Tips: I really think the pickled beets make this dish. I find them at the grocery store sold in jars and they are cut into large chunks. I like to serve this dish with medium-hot salsa on the side. I especially like it with habanero sauce.
