How to Make Baked Chicken in Creamy Tomato Sauce

This recipe for baked chicken in creamy tomato sauce is so light, healthy & comforting. You could serve this over noodles or rice or maybe with a piece of garlic bread. For tonight I decided to keep it simple and serve the chicken baked in the sauce.

Baked Chicken in Creamy Tomato Sauce Ingredients (serves 2)

2 chicken breasts
1 cup tomato basil sauce (you can make your own homemade sauce or use any store-bought sauce such as Classico)
2/3 cup light coconut milk (you could use real milk or nut milk instead)
1/4 tsp cayenne pepper
1/2 small yellow onion cut into 1/2 inch chunks
2 tsp minced garlic
1/2 tsp herbs de Provence
1/4 tsp sugar
1/4 tsp salt

Instructions

  1. Preheat the oven to 425°F, let the chicken rest on the counter while you preheat the oven (this will help to bring it closer to room temperature before it starts cooking)
  2. Stir tomato basil sauce, coconut milk and dry ingredients in a bowl while the oven is pre-heating
  3. Place the chicken in a glass pie dish, insert the meat thermometer into the thickest part of the chicken, pour the sauce overtop spooning some right on top of each chicken breast
  4. Cook for 25-30 minutes until the chicken reaches an internal temperature of 167°F, let the chicken rest for at least 5 minutes before plating
  5. Using a spatula carefully remove the chicken from the pie plate & place in a serving bowl, spoon sauce around the chicken

Tips: This baked chicken in creamy tomato sauce dish is full of flavor however if you like your chicken to be more fully seasoned you could marinate it in the sauce for 24 hours before baking it. If you love cheese you could certainly put shredded mozzarella on top of the chicken before baking it. This dish is a little spicy, if you don’t like spice please leave out the cayenne!
