How to Make a Bagel with Lox and Avocado

Do you love a bagel with lox? Do you love avocado? Well, then we have a lot in common! I crave salty foods like lox and I absolutely love capers and red onion. I would probably rank bagel & lox in my top 10 favorite breakfast ever! I discovered an ingredient that makes these taste even better than what I can find in a restaurant. I like to drizzle extra virgin olive oil all over the top of the bagels & lox right before serving. I don’t know why but it just makes it taste heavenly when it’s got EVOO all over it! I noticed that I often serve this dish with avocado on the side & today I tried putting the avocado on top of the bagel and lox and whoah! Unbelievable flavor! So delicious!

Ingredients (serves 2)

2 bagels
8 tbsp cream cheese or Neufchatel cheese
3 oz salmon lox
10-12 slivers of red onion
10-12 capers
4 tsp extra virgin olive oil to drizzle on top
1 avocado

Instructions

  1. Cut the bagels in half and toast them, set them on their plates with the cut side up
  2. Spread the cream cheese onto the bagel halves and add extra if you like alot
  3. Divide the salmon lox evenly and place on top of the cream cheese layer of each bagel half
  4. Divide top with red onion & capers (put equal amounts on each bagel half)
  5. Drizzle extra virgin olive oil on top of each bagel half
  6. Slice avocado and serve on the side (or put right on top of your bagel halves! It’s delicious!

Tips: You can serve these bagels with lox & avocado with a slice of fresh lemon if you have it, tastes delicious squeezed on top! You can get creative with this and throw on a little fresh dill or fresh basil. Sometimes I like to add fresh tomato slices, tastes quite amazing! You can put a fried egg on top to make this a heartier meal or a sandwich! Enjoy!
