This recipe for bagel breakfast sandwich option #2: egg, cheddar & sweet pepper is incredible! It has such an amazing blend of flavors you will love it! There are no words to express how yummy this is. I make bagel sandwiches a lot and I usually invent something new each time. but this one was so delicious that I had to write it down and share it out! I recently started buying Piquillo peppers and they taste so good in salads and breakfast dishes. They are marinated sweet red peppers and they have such an interesting flavor that is a little tangy. I’m excited to continue cooking with them!
Bagel Breakfast Sandwich Ingredients
1 jalapeno cheese bagel
1 larger slice of cheddar cheese
1 egg
2 marinated Piquillo peppers
2 tbsp butter
garlic powder
salt
Instructions
- toast the bagel, butter the bagel, sprinkle the bagel with garlic powder and a little salt – set aside
- fry an egg over-easy, place the cheese on top, and cover the frying pan with its lid until the cheese is melted
- place Piquillo peppers on the bottom bagel bun, next the egg with cheese on top next, add more garlic powder and salt, place bun on top, and cut in half
