Have you ever had a bagel breakfast sandwich with double egg and cheddar? Oh my, you are gonna love it! I made this one morning when I had limited ingredients and it’s honestly become a staple around my house. My favorite thing is to make one of these and cut it in half before a drive to the ocean. I like to wrap them up with foil and they halfway to the beach when we’re hungry we unwrap them and eat them as we drive. This is a hearty, portable, and delicious meal that could be a breakfast and lunch combo if needed. It will feed one person if they are super hungry or two people if they want something filling but smaller.

Avocado would be a great one this too, but if all you have is egg and cheese.. you won’t be disappointed!. Not a cheddar fan? Try a different cheese instead! The garlic and butter are key flavor boosters! I like to use those on all of my bagel sandwich recipes! Do you love this recipe? Please let me know in the comments!
