How to Make a Bacon and Pepper Jack Breakfast Burrito

This bacon and pepper jack breakfast burrito recipe is killer! I made it for my hubby the other day and he said “You should open a restaurant just based on this burrito”. Wow! Ok, well I don’t think I am looking to open a restaurant anytime soon but I am more than happy to take that huge compliment from my husband! The secret to this burrito is the bacon. Truthfully, I don’t buy bacon very often since I’m very health-conscious. However, with the holidays coming up I had purchased some to cook with for Thanksgiving and figured I’d buy an extra pack since I know how much Carl loves bacon. He was so excited, haha. It’s probably the first time in 6 months I’ve bought it for him. The whole apartment smelled like applewood-smoked bacon and since we had pepper jack cheese I decided to use that for the burrito too. There is one healthy ingredient which is the whole wheat tortilla! See, not a total bust!

Bacon and Pepper Jack Breakfast Burrito Ingredients

1 whole wheat tortilla
2 pieces Tillamook pepper jack cheese (pre-sliced)
4 pieces oven-baked bacon
2 eggs
1 tbsp finely chopped green onion
salt and pepper to taste
1/4 tsp sriracha sauce
1 tbsp butter

Instructions

  1. cook the bacon, patt the grease off, and cut it into small pieces, set aside
  2. melt the butter in a skillet, scramble the egg and cheese together on low heat until fully cooked, add in the bacon, and toss some more, remove from the heat (I like to scramble them right in the pan)
  3. squirt the sriracha sauce onto the whole wheat tortilla, add the filling, and then sprinkle with green onion
  4. roll up the burrito and cut it in half, serve!
