How to Make Potato Latkes

I’ve always really loved potato latkes, and I wanted to create a recipe that was classic but also fully gluten-free. These latkes are absolutely delish, and I’m very proud to share this recipe with you. This would be delicious as a dinner side for any winter celebration and also fabulous for breakfast. This dish goes really well with lox, if you want to really knock your guests socks off!
Potato Latke Ingredients
2 lbs organic Yukon gold potatoes (5-6)
1/4 cup chopped green onion
1 small organic white onion
avocado oil
2 eggs
2.5 tbsp gluten-free flour
1.5 tsp organic pink himalayan salt
3/4 tsp fresh ground pepper
optional: organic unsweetened apple sauce (serve on the side)
optional: sour cream (serve on the side)
Instructions
- Peel the potatoes, cut them into fourths, and shred them coarsely using a rotary cheese grater
- Shred the white onion also
- Put shredded potatoes and shredded onions in a bowl and toss together
- Add in the egg, flour, salt, pepper, and chopped green onions, stir well
- Coat a large skillet with avocado oil and heat to medium-high
- Using a slotted spoon, scoop up about a 1/4 – 1/2 cup of potato mixture and put in the skillet, cover and cook on medium for 4 minutes, flip and press down on the latke and cook another 4 minutes, add additional avocado oil to each batch
- transfer latkes to a paper-towel-lined plate
- Garnish with a few pieces of chopped green onion
- serve with organic unsweetened apple sauce and sour cream
