How to Make Slow Cooker Bone-in Chicken Thighs with Herbs

Have you ever slow-cooked bone-in chicken thighs before? It’s actually incredibly easy. This delicious savory recipe only takes a few moments to prepare and it tastes incredible. I like to serve my chicken with jasmine rice and pour some of the drippings over the rice. Wowza! This is honestly one of the most delicious meals I have created and I hope you love it too! My fiance was wowed by it and it’s different from anything I’ve ever cooked him before. I often buy boneless skinless chicken but I have heard that the bone-in pieces are more flavorful and tender. I totally agree! It will be hard to go back to cooking boneless after this delicious feast! I love slow cooker recipes like this slow-cooker bone-in chicken thighs because they are so easy!

Ingredients

Seasoning Sauce Ingredients

2 tsp minced garlic
1 tbsp fresh basil (chopped)
1 tsp Italian seasoning
1 1/2 tbsp extra virgin olive oil
1 1/4 tsp salt
1 1/4 tsp ground pepper
1 1/4 tsp paprika

Broth Ingredients

8 bone-in skin-on chicken thighs
1/2 tbsp fresh basil
1 1/4 tsp oregano
2 tbsp minced garlic
1/2 white onion chopped fine (food processer)
1/4 tsp chili powder
1/4 tsp cayenne pepper
4 tbsp melted butter (could be vegan butter if you’re dairy-free)
2 tbsp lemon juice
2 cup chicken stock

Instructions

  1. place all 8 bone-in chicken thighs into the slow cooker
  2. mix all seasoning sauce ingredient together in a small bowl & brush onto tops of chicken thighs
  3. place all broth ingredient in a glass pitcher & stir
  4. pour broth into slow-cooker (try not to disturb the seasoning sauce on top of each chicken thigh)
  5. cover and slow-cook for 5 hours on low
  6. plate the chicken
  7. take the drippings and strain through a sieve, pour some of this sauce on top of the chicken
  8. if you’re serving this dish with jasmine rice pour some of the dripping on top of the rice and stir before serving.
